Especially, it helps my mood. Shedding a layer or two of sweaters and thermals and seeing green again, every year I'm newly baffled and amazed by nature. In the mountains, where winter is so dead and white, so absolute, to see green again renews my soul.

April
Besides Passover, Pasqua, and Pasquetta, April also brings Dandelions to the mountains. I grew up with Dandelions all around me in Oklahoma and Texas. My first paid labor was picking my neighbors weeds from their lawn, which included Dandelions. We didn't know you could eat em! Even living in Israel and travelling all over this world, I thought that there is only one main purpose for Dandelions:
But it turns out I could have saved a lot of money on salads by eating the younger sprouts of these silly little weeds.
I've read that you can eat the dandelion in its entirety and that it's a good source of calcium and some vitamins or two. I'm just happy to be eating pesticide-free foliage. Look at the abundant supply, although now the season for eating them is just about up because when the flowers sprout the leaves become too hard and not tender enough to enjoy.
